I'm a stay at home mom, homeschooling my kids, and the wife of an OTR driver; I have to find ways to stretch our money every month because we want to pay off our house in 2 years. My DH is a big fan of Dave Ramsey and his techniques on debt reduction (all we have is our house) and saving money. This is a Dave Ramsey inspired list. Top five rice and beans menus
| 1. | Baked beans (purchased on sale, in bulk, with a coupon) and rice topped with cheese and served with tortilla chips (including the broken bits) |
| 2. | Canned chili beans mixed with rice served on a corn tortilla with cheese, lettuce, and salsa |
| 3. | Stolen bowl ala KFC: bottom of the bowl cooked (formerly frozen) mixed veggies, middle layer leftover beans from 1 or 2), topped with mashed potatoes and of course, cheese |
| 4. | Chili (homemade or canned) on top of spaghetti, with a serving small red beans, finely chopped onions, and yes, cheese |
| 5. | Soup ala leftovers, add left over beans of any kind, veggies, pototoes to a large pot, cover with water, boil until tender or wilted or unrecognizable as meals 1 -4, add 1-2 crumbled vegetable boullion cubes, let stand 20 minutes (you need this time to assemble a salad and find the cheese!) |
