White Chicken Chili Recipe

Here is a fantastic recipe for White Chicken Chili (the yield is 5 gallons). Thanks Mom!
| | Ingredients |
| | 4 gallons white sauce - ½ gallon |
| | 4 pounds diced chicken - ½ pound |
| | 1 pound salted butter - 2 ounces |
| | 4 pounds diced yellow onions - ½ pound |
| | 2 ounces chopped garlic - 1 teaspoon |
| | 4 tablespoons cumin - ½ teaspoon |
| | 2 tablespoons oregano - 1 ½ teaspoons |
| | 1 tablespoon cayenne pepper - ¼ teaspoon |
| | 2 cups chopped canned jalapeños (or green chilies) - ¼ cup |
| | 3 cans great northern beans - 2 (10 oz) cans |
| | chicken base to taste - ¼ cup |
| | shredded mozzarella cheese to finish

| | Method |
| | Make the white sauce (see below). In a separate pot, sauté the onions in the butter. Add the garlic and spices. Add the sauce and simmer. Add the remaining ingredients except for the shredded cheese. Send out with a garnish of shredded mozzarella. Taste for seasoning and serve.

| | 8 c. milk, or half and half |
| | 4 tsp. salt |
| | 1 tsp. Pepper

| | Method - (White Sauce) |
| | Melt butter and stir in flour; gradually stir in milk and stir until mixture boils and thickens, then cook about 3 minutes longer, stirring occasionally; add seasonings. Place over hot water to keep hot and cover tightly to prevent crust from forming on top. |
